Gluten-free Pancakes

Ingredients:

  • 1 cup millet flour
  • 1/3 cup tapioca flour
  • 2 tsp. baking powder
  • 1 egg
  • 2/3 cup water
  • 1 tbls. maple syrup
  • 2 tbls. olive oil

Directions:

  1. Mix together flours and baking powder.
  2. Mix together egg, water, syrup, and olive oil.
  3. Add together the two mixes and stir until completely mixed.
  4. Drop batter onto hot griddle by the 1/4 cup.
  5. Wait until you see bubbles forming on the outside to flip.
  6. Enjoy!
