Ingredients:

  • 1 small red onion
  • 1 can black beans
  • 1 cup frozen or fresh corn
  • 1 tomato
  • 1/2 cup of chopped green bell pepper
  • 2 tbls. cilantro
  • 1/2 cup balsamic vinegar
  • 1tbls. olive oil
  • salt

Directions:

  1. Chop up the onion, tomato, and green pepper.
  2. Combine ingredients and refrigerate for 30 minutes, then serve.
